Slow connection..

Hello all! Sorry I have not been posting. The internet connection is very slow and finicky where I am staying. It has been very difficult to upload photos to this site. I will have to wait until I can find a better connection but I am not sure when that will be. For now I will be posting via Instagram (jeskimo.edwa) and Facebook. For some reason, photos tend to upload faster on these sites. Thank you again for you patience!

Quick Post!

Hello all! We made it safely to Dumaguette. We arrived Sunday at about 6pm local time (2am Pacific time, 16 hours difference!). The time difference and lack of sleep over the last few days has really affected me! Plus, I am enjoying  seeing my family after 3 years. Needless to say, I will be slow to post.

I am hoping to post some pictures of our time in Manilla in the next post. Thanks for your patience.

15 Days!

In fifteen days I will be headed to the Philippines. For those of you who have not heard, my family and I were blessed with tickets to see our family overseas. God is faithful!

It has been three years since our last visit. These last few weeks have gone by at a snail's pace! Here's hoping the next couple weeks don't take as long. I still have lots of packing and other little things that I need to do but I am just ready to be there!

 I am SO excited. I even bought a new backpack.

There's not a whole lot to talk about yet. Once the travelling begins, I will do my best to post here often. I can't wait to share this trip with you all. I'm looking forward to what God is going to do. As always, it's not just a vacation but an opportunity be light.

Food!! Slightly Scary Edition..

I did it (well, we did it... Kelsey and I). The one thing I thought I would NEVER do. Balut. For those of you who do not know, balut is a partially developed egg (chicken or duck). You can enjoy balut with beak, feathers, and other lovely bits depending on what stage you get it at. Luckily, mine had no 'recognizable' bits.

Penoy was also on the menu. It is a partially developed egg but still has the appearance of an egg (for the most part, the white part turns a lovely shade of carmel brown). It tastes like a boiled egg but with the texture of soft rubber. Not bad all in all. Although, I doubt I'll be eating it for breakfast every morning...

Pictures: The egg with an 'x'  and the carmel brown egg (on the left, 2nd photo) is the penoy. The last picture is also penoy. The rest is all balut. The sauce we used was just vinegar.

Fresh Produce

Sorry it's been a few days since I've posted last. We've been super busy and having lots of fun, but there hasn't been a whole lot of exciting things to post.

We went to a place that was set up like a farmer's market. Fresh fruits and vegetables. They also had some yummy rice goods (desserts) and a few miscellaneous items. We did quite a bit of shopping!
